this. it is not a spanner head. no need to notch, there doesn't appear to be anything in the center. just fit a flat blade to catch the two lobes. thats an old screw. vice grip pliers will probably work too if you don't plan to reuse the screw

two negatives with stainless. noise, and it is a conductor. the granite composites will have a slightly better insulating value - the hot water in the sink stays hotter linger, or the ice last longer for that impromptu bottle chiller. also stainless steel sinks tend to be shallower due to the metal drawing process

it is not uncommon to have white wires connected to a switch, BUT as current carrying conductors they should have been colored black, or had black tape wrapped around them. otherwise they could be mistaken for neutrals. should be marked at the switch, and at the load end.

if it is good furniture it is probably a lacquer finish - acetone will remove lacquer. putting poly over an unknown finish could be a disaster and it could peel off. you may want to let a refinisher fix it for you
